Golden Quinoa Tabbouleh....a FARMBloomington Fresh Recipe....

A few weeks ago I was at the Farmers Market in Bloomington, as I am most Saturday mornings, and I watched a demo by 2 of the chef's at FARMBloomington.  I have mentioned before that Farm is one of my favorite restaurants around.  The food is uniquely eclectic and I never leave disappointed.  Or hungry!

I watched Chef Ian make a tabbouleh that was quick and simple.  He handed out samples and the recipe!
Always interesting live music

There is always a line at the many local food booths

Golden Quinoa Tabbouleh
4 C water
2 C golden quinoa (the standard that you find at the store works well here)
1/2 C olive oil
1/3 C lemon juice
1 C chopped parsley
1/2 C chopped green onion
mint and chives (chives are optional but I like them so I use them)
2 Tb chopped garlic
2 C of your choice of fresh veggies, small chunks, I used grape tomatoes and red peppers, that's what I had
salt and pepper to taste

In a saucepan bring water to a boil.  Add quinoa and a piinch of salt.  Reduce heat to low, cover and simmer for 25 minutes.  Allow to cool and fluff with a fork.
Meanwhile, in a  large bowl, combine olive oil, lemon juice, veggies you want, parsley, mint, green onion and chives.  Stir in the cooled quinoa.  Add salt and pepper to taste.  Toss and enjoy!

Thank you to FARMBloomingotn and Chef Ian for providing the recipe :)
I can assure you Ian's was much netter and more fluffy as he did not over boil his quinoa like me!
