A few weeks ago I was at the Farmers Market in Bloomington, as I am most Saturday mornings, and I watched a demo by 2 of the chef's at
FARMBloomington. I have mentioned before that Farm is one of my favorite restaurants around. The food is uniquely eclectic and I never leave disappointed. Or hungry!
I watched
Chef Ian make a tabbouleh that was quick and simple. He handed out samples and the recipe!

This is a high sculpture in the center of the market
Golden Quinoa Tabbouleh 4 C water 2 C golden quinoa (the standard that you find at the store works well here) 1/2 C olive oil 1/3 C lemon juice 1 C chopped parsley 1/2 C chopped green onion mint and chives (chives are optional but I like them so I use them) 2 Tb chopped garlic 2 C of your choice of fresh veggies, small chunks, I used grape tomatoes and red peppers, that's what I had salt and pepper to taste
In a saucepan bring water to a boil. Add quinoa and a piinch of salt. Reduce heat to low, cover and simmer for 25 minutes. Allow to cool and fluff with a fork. Meanwhile, in a large bowl, combine olive oil, lemon juice, veggies you want, parsley, mint, green onion and chives. Stir in the cooled quinoa. Add salt and pepper to taste. Toss and enjoy! |
