Saucy ...

First an egg dish now shrimp?  This is what my Sister will say when she reads this!  Everyone knows I really am not a fan of shellfish (or fish for that matter).  For me it is a consistency thing.  I have tried several times but if it is that much work to "like" something then it is not worth it to me.

The exception here is sushi.  As long as it's cooked I love a good sushi handroll.  There is just something  to be said for "out of sight...out of mind."  I somtimes follow this philosophy with my kids.  I have been known to puree , hide, things I know they won't eat only to tell them after the fact what they ate (and usually liked).

Having said all of this I would be remiss if I didn't mention the real reason I decided to make a "meatless" dinner last night.  I have been recently asked by 2 people who aren't eating meat in Fridays in observance of Lent, if I had a good fish/seafood recipe.  I really didn't BUT what I did have was a quick and tasty chicken dish that I knew could be easily modified.

I made this in 25 minutes.  I took advantage of frozen cooked shrimp, bagged spinach and a quick cooking angel hair pasta.  Make any modifications you like, this is easy :)

Shrimp Saute Over Angel Hair

1 lb uncooked Angel Hair (or whatever you have on hand)
1 1/2 frozen shrimp,thawed if you want to  (you can use whatever you find as long as it's peeled and deveined) or cooked cut chicken
2 TB olive oil
3 garlic cloves
salt/pepper
1 1/2 C chicken broth
1 lemon juiced
1 tsp dried basil
2 tsp cornstarch
4 C fresh spinach, roughly chopped
1/2 C feta
1/4 C fresh basil,chopped

Cook pasta.  While that is going start shrimp saute.  In a large skillet, saute shrimp in oil until warmed through (or pink).  Add the garlic, salt and pepper.  Cook 1 minute longer.  Remove to a bowl.
In the same skillet heat 1 C of the chicken broth, basil and lemon juice.  In a little bowl, combine the cornstarch and remaining broth.  Bring to a boil.  Cook and stir for 2 minutes or until thickened.


Stir in the spinach and cook for 1 minute or until a little wilted.  Add the shrimp and heat for just a few seconds.  It should still be hot.

Pour hot pasta into a large serving dish and pour the shrimp mixture over the top.
Add the feta and basil. 
Enjoy :) 
I actually ate this with the shrimp and I have to admit...I was wrong about this crustacean.....It was tasty!
