A Little Hidden Treat...

Yesterday my family and I visited two old friends and their daughters at their new house.  I wanted to bring something that I had made and since I am still on a Nutella/peanut butter/chocolate kick I wanted to make sure I satisfied my daily need for these flavors!

I have a banana muffin recipe that I make and I knew that would work with a filling.  You just need a little bit of it so make sure not to use too much so it won't leak out and ruin the surprise.
Surprise muffins for Dan, Katie and their sweet little girls!



 My Basic Banana Muffin recipe with Nutella or Peanut Butter Filling
3 ripe bananas (mashed)
6 tbsp vegetable oil (alternately you could use equal amount natural applesauce which is what I did)
1/3 cup sugar
1/2 tsp salt
1 egg
1 tsp vanilla
1 cup all-purpose flour
1/2 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
6 tbsp Nutella, peanut butter or mini chocolate chips
*I also add 2 TB of milled flax seed at the end. OPTIONAL*

Mash ripe bananas in a mixing bowl. Add oil, sugar, salt and mix just until well blended. Add the egg and vanilla.  Fold gently until mixture is all incorporated.
In another bowl combine flour, baking soda and baking powder. Add to wet mixture. Stir just until moist.


Lightly spray a 12-cup muffin tin with a non-stick spray and add a little bit of batter into each cup. Drop a small amount of Nutella (or filling of your choice) into the center of each cup. Top them with remaining batter to completely cover the filling.
Bake at 350 degrees for 16-18 minutes or until tops are light brown.

I made a double batch and filled half with Nutella and half with peanut butter and a few mini chocolate chips as my oldest is allergic to all tree nuts.

I think these not only make a great after-school snack but also a great addition to a cup of yogurt and fruit for breakfast.
