In keeping with my Cinco de Mayo theme this week I have 2 new recipes: BBQ Beans and Avocado Sauce for taco's. Both so good and a welcome new addition to my "Mexican Night" repertoire :)
BBQ Black Beans
2 15 oz cans of low sodium Bush's Black Beans
1 1/2 C water
1 C chicken broth
1/2 C packed DARK brown sugar
3 TB ketchup
3 TB bacon fat (yes, I used bacon fat) ***OPTIONAL**
2 TB red wine vinegar
1 small can diced green chiles
1/2 tsp cayenne pepper
Combine all ingredients in a saucepan over medium heat.
When the mixture begins to bubble, reduce heat and simmer, uncovered, for 60-75 minutes or until the beans are soft and the sauce is thick.
| Sweet, smoky and savory. Not your ordinary black beans! |
| Talk about a fake-out....use this "creamy" sauce in lieu of sour cream. You won't even miss it! |
Avocado Sauce
1 ripe Haas avocado
1 jalapeno, seeded
1 C water
1 TB white vinegar
1 tsp salt
1/3 C chopped cilantro
2 TB diced onion
Combine ingredients in a food processor and pulse until pureed. The consistency is up to you. In my house everything gets pureed...so the Picky Child will eat it ;)

I have an old clay bean crock that belonged to my great grandmother and she and that crock made the best beans. My grandmother used it also with the same results. But I am just using it as a precious treasure it is so thin I would hate for it to get broken. Your beans look delicious!

ReplyDeleteI love black beans and they are a staple in our house. I had a wonderful Cuban friend when I lived in Florida who taught me how she made them. Perfect. Your recipe is very similar to hers.
