Just a Quick Little Bite....

Sometimes the best things I make are the ones I throw together at the last minute with what I find in the refrigerator.  I may have a hankering for something fresh and crunchy or extra fruit laying around that needs to be used up.

Last night was one of those nights that it took me forever to get my dinner on the table.  I was making Greek burgers on the grill and this recipe is for my column on Saturday so I needed it to turn out.  I am already a day behind getting all of this together so I was a bit frazzled.  My husband was gone with the boys to son #2's Skipping Stars performance so for an hour I had the house to myself.  The thought was that I would get dinner made and most importantly, get that elusive "perfect shot" of the end result.

Take the picture inside or out, paper plate (cook-out themed article) or nice white plate...decisions, decisions!

So what I needed was a quick, crisp side.  What I came up with was my new favorite salad.  This is by NO means revolutionary.  Just simple and clean.  My kids liked it and we ate the whole dish of it so that is how I measure it's simple greatness! 


Romaine Hearts with Orange Slices and Red Onion

3 Romaine hearts, washed and roughly cut
3 navel oranges, peel cut off and sliced into disks
1 small red onion thinly sliced into slivers
olive oil, white wine vinegar, coarse salt and fresh pepper

Layer the first three items in a pretty dish.  Then add desired amount of fresh pepper and coarse salt over the top (a few pinches sprinkled about).  Then drizzle a little olive oil and vinegar.  Not a lot but shake a little here and there.  There was just a little orange left on one of the peels so I squeezed it over the top as well.

  1. These are the type of recipes I see and think well gee Lark, why couldnt you have thought up that?...It just goes to show you WE all have a different "TAKE" ON RECIPES.   5. That looks very refreshing... with a burger, score! the children liked it ? double score!!! :) Thanks for sharing. I love any salads so I'll have to remember this next time. I am not good at throwing things together for dinner. I get too frazzled if dinner is not set at the beginning of the week and then fixed 30 min. before hubby gets home.

  6. Have your kids always like salad and especially onions? I just keep pushing the salad part, and most of my kids will eat it fine, but they draw the line at onions. I figure when they get older, they'll come to appreciate them.

  8. My kids have always liked salad so I use that to get a few more things in like veggies...BUT< the onions are a hard sell. The weird thing is if I slice red onions REALLY thin they will eat them in moderation.
    I, roo, plan my meals out at the beg. of the week but we had a crazy schedule this week due to the last week of school so I made 3 meals on Sunday. Then I just had to heat up. But on this night I had to heat, make a salad, make my meal for my article (always Sunday's post) and get some good shots in outside before the rain. So frazzled I was!
